Ingredients:
- Some vegetable oil
- 1 sweet potato
- 1 swede
- 2 carrots
- 1 potato
- 1 onion
- 1 tin of chopped tomatoes
- 200g small pasta (e.g. macaroni)
- Salt & pepper
- Mixed herbs
Method:
- Chop all the vegetables to a similar size
- Heat a large pan with oil
- When the oil is hot, add in the onions and cook for 1 minute
- Next add in the swede and carrots and cook for 3 minutes
- Add the potato and sweet potato
- Add the chopped tomatoes and cook for 5 mins, stirring gently
- Add 200ml of water to the pot and bring to boil
- Season with salt and pepper
- Add in the pasta to the pot of vegetables along with some mixed herbs, and cook together for 12 mins. Then the soup is ready to eat!
