Vegetable and pasta soup

Ingredients:

  • Some vegetable oil
  • 1 sweet potato
  • 1 swede
  • 2 carrots
  • 1 potato
  • 1 onion
  • 1 tin of chopped tomatoes
  • 200g small pasta (e.g. macaroni)
  • Salt & pepper
  • Mixed herbs

Method:

  1. Chop all the vegetables to a similar size
  2. Heat a large pan with oil
  3. When the oil is hot, add in the onions and cook for 1 minute
  4. Next add in the swede and carrots and cook for 3 minutes
  5. Add the potato and sweet potato
  6. Add the chopped tomatoes and cook for 5 mins, stirring gently
  7. Add 200ml of water to the pot and bring to boil
  8. Season with salt and pepper
  9. Add in the pasta to the pot of vegetables along with some mixed herbs, and cook together for 12 mins. Then the soup is ready to eat!
