Sweet Potato And Chickpea Curry


  • Some vegetable oil
  • 1 onion (small)
  • 1 sweet potatoes
  • 1 tin of chickpeas
  • 1 tin of tomatoes
  • 2 tbs curry powder
  • ¾ tsp ginger
  • ¾ tsp turmeric
  • ½ tsp cumin
  • Salt to taste


  1. Dice the onions and sweet potatoes and keep aside
  2. Drain out chickpeas and keep aside
  3. Heat a large pan with oil
  4. When the oil is hot, put the onions in the pan and stir until they begin to turn soft and golden
  5. Add in the sweet potatoes and mix in spices, let it cook for about 2 mins stirring occasionally to prevent from burning
  6. Add the chopped tomatoes and then fill the tin with cold water twice and pour the water into the pot
  7. Reduce the heat and leave to simmer for 20-30 mins stirring occasionally
  8. Add chickpeas and season with salt
  9. Cook for another 10-15 mins then the curry is ready to eat!
