Ingredients:
- Some vegetable oil
- 1 onion (small)
- 1 sweet potatoes
- 1 tin of chickpeas
- 1 tin of tomatoes
- 2 tbs curry powder
- ¾ tsp ginger
- ¾ tsp turmeric
- ½ tsp cumin
- Salt to taste
Method:
- Dice the onions and sweet potatoes and keep aside
- Drain out chickpeas and keep aside
- Heat a large pan with oil
- When the oil is hot, put the onions in the pan and stir until they begin to turn soft and golden
- Add in the sweet potatoes and mix in spices, let it cook for about 2 mins stirring occasionally to prevent from burning
- Add the chopped tomatoes and then fill the tin with cold water twice and pour the water into the pot
- Reduce the heat and leave to simmer for 20-30 mins stirring occasionally
- Add chickpeas and season with salt
- Cook for another 10-15 mins then the curry is ready to eat!
