Polenta chips with ham, peas and carrots

Ingredients:

  • Some vegetable oil
  • 1 pack of cooked polenta
  • 1 tin of peas
  • 1 tin of ham
  • 1 tin carrots

Method:

  1. Heat oven to 200 degrees celsius
  2. Cut the polenta into thick chip shapes
  3. Arrange these onto a baking tray lined with foil
  4. Lightly coat the chips with oil
  5. Season with salt & pepper
  6. Bake for 20-25mins until chips are golden
  7. While the chips are cooking, heat a pan with a bit of oil
  8. Add the ham and peas into the pan, stirring continuously until they bind together and season to taste
  9. Add the carrots into a separate ban with some butter and cook until soft
